1 rotisserie chicken, cooled and chilled
1 small onion, diced
1 medium apple, peeled,cored and diced
2 celery stalks, diced
½ cup golden raisins
For the dressing:
½ cup mayonnaise
1 tablespoon apple cider vinegar
2 teaspoons Dijon mustard
2 teaspoons honey
1 teaspoon curry powder
Salt and pepper
In a small bowl, whisk together dressing ingredients. Season with salt and pepper according to taste.
Separate chicken meat from skin, bones and gristle and chop. In a medium or large mixing bowl, stir together chopped chicken, onion, apple, celery, raisins and dressing.
Serve on a sandwich with multi-grain bread, lettuce and tomato or as a snack with crackers and vegetables.
